Chop onion, ginger, garlic, and dice green and red pepper. Kill and clean the yellow croaker.

Rub the bottom of the pot with ginger, heat the pot with cold oil, add croaker and fry until golden brown on both sides.

Remove and set aside.

Leave the oil in the pot, stir-fry the star anise and black bean sauce over low heat until fragrant.

Add ginger and minced garlic and stir-fry until fragrant.

Pour in cooking wine, soy sauce, sugar, warm water, salt, and pepper and bring to a boil over high heat.

Add the fried yellow croaker and bring to a boil, then reduce the heat to low and simmer covered for about 7-8 minutes.

When the soup becomes less, add diced green and red pepper and cook for a while.

Remove the yellow croaker and serve on a plate.

Pour in the water and starch into the soup left in the pot to form a thin gravy.
