Geleshan Spicy Wings
Overview
Cut the chicken wings in half and fry them using the method of Gele Mountain Spicy Chicken. It’s hot and spicy, and the dry aroma is alluring!

Wash the chicken wings and cut them in half, use kitchen paper to absorb the water;

Add 1/2 tsp of salt, 1/2 tsp of chicken essence, 1 tsp of cooking wine, 1 tsp of soy sauce, and 1 tsp of dry starch, mix well until it becomes pulpy, and marinate for more than 10 minutes;

Scrub the dried red chili peppers clean and fry them into small pieces;

Slice garlic, shred ginger, and set aside pepper;

Heat a wok, add an appropriate amount of cooking oil, and when it is 60% hot, add the wings, turn to medium heat, and fry for 5 to 8 minutes, until the outer skin is charred and turns brown;

Remove and drain the fat;

Leave the oil in the pot, sauté the peppercorns over low heat until fragrant, add shredded ginger and garlic slices, and stir-fry until fragrant;

Add the chili segments, continue to stir-fry over low heat until the chili segments turn deep maroon;

Add a few drops of sesame oil and stir-fry evenly;

Add the chicken pieces and continue to stir-fry over low heat;

Add 1/2 tsp salt, 1/4 tsp chicken essence, 1 tsp sugar, stir-fry evenly;

Sprinkle in an appropriate amount of cooked sesame seeds, stir-fry evenly, and serve.
