Dried twice-cooked pork
Overview
It is another home-cooked dish that goes well with rice. You can make twice-cooked pork with green pepper or twice-cooked pork with fragrant dried herbs. The recipe is similar but the ingredients are slightly different. I have seen professional recipes that add sweet noodle sauce. I don’t like meat with sweetness, so I don’t add this ingredient. I think this dish is better with a salty aroma and a little spiciness

Put the pork belly in cold water. After the water boils, add a spoonful of cooking wine and continue cooking for a few minutes. If you have Sichuan peppercorns in this step, you can add a little Sichuan peppercorns

While the pork belly is draining, prepare other ingredients. Chop the Pixian bean paste, rinse and chop the tempeh, cut the garlic sprouts into sections, slice the dried sesame seeds, cut the dried chilies into sections, slice the ginger, and slice the garlic

Rinse the drained pork belly, let cool and then cut into thin slices

Fry the pork belly over low heat until the fat part becomes transparent

Pour off some excess oil, then add ginger slices, dried chili peppers, garlic slices and pork belly and stir-fry over low heat until fragrant
