My favorite food in summer is frozen pork rinds, which is appetizing and beautiful. But the pork skin jelly I buy always has a smell, which I don’t like. So I often cook and eat it at home. Wash the pig skin, put it into a pot of boiling water and cook for three minutes

Take out the cooked pork skin and wash it. Use a knife to scrape away the grease on the surface. Be sure to scrape it clean, so that the pork skin jelly will be crystal clear~

Cut the scraped pork skin into thin strips.

Put the shredded pork skin into a pot of boiling water, add lemon peel, a small spoonful of cooking wine, and cook for another 5 minutes.

Drain the boiled pork skin from the hot water, put it in cold water, and wash it several times.

Put cinnamon, star anise, ginger, onion and bay leaves, salt, and sugar into the pressure cooker and press the cooking button.

Dice carrots and cucumbers. Blanch the sweet corn kernels in boiling water.

Pour the pork rinds from the electric pressure cooker into a cooking pot and bring to a boil. Add the corn and carrots and cook over medium heat for three minutes.
