It’s already the beginning of spring, and you should eat more winter bamboo shoots, leeks and other foods at the beginning of spring. Today I’m going to make a Shanghainese dish, a side dish of pork, diced peanuts and winter bamboo shoots. It’s also my mother’s taste, a dish I loved when I was a kid.

Wash and cut the plum meat into cubes.

Add starch, cooking wine and salt to the diced meat, mix well and marinate for a while.

Blanch the winter bamboo shoots in a hot water pot, remove and dice them.

Soak the peanuts in hot water and peel them.

Heat oil in a pot, add peanuts over low heat and stir-fry until golden brown and take out.

Simmer onions and ginger in a pot.

Add the diced pork and stir-fry until the color of the diced pork turns white.

Add in diced winter bamboo shoots and stir-fry.

Add sweet noodle sauce and a little sugar and stir-fry for a while.

Finally add the diced peanuts and stir-fry a few times.
