First, combine the starch powder and flour, add a little salt, add water and stir to avoid lumps.

Boil water in a steamer, place a shallow plate on top to steam the cold skin. Brush a little cooking oil on the plate and pour the batter into it. Steam until the surface of the cold skin is not sticky and scrape it off with a scraper.

Repeat the above steps to cool and cut the prepared cold skin into thin strips for later use. If you want a cooler taste, you can put it in the refrigerator to cool.

Cut the cucumber into shreds and blanch the bean sprouts and set aside.

Finally, put the side dishes and cold skin into a larger container, stir the soy sauce, vinegar, garlic water, chili oil, and coriander thoroughly and serve.
