Spicy Tofu Fish

Cut grass carp into pieces, add dark soy sauce, oyster sauce, sugar and cooking wine and marinate for 30 minutes.

First, soak the tofu in salt water for a while. This way, it will not easily fall apart or harden when cooked, and the texture will be smoother and more delicious.

Put oil in the pot, add tofu, fry until both sides are slightly brown, put on a plate and set aside.

Add some oil to the pot, simmer the pot with ginger, onion and garlic until fragrant. Add pepper powder, chili sauce, fermented bean curd, red pepper and dark soy sauce and stir-fry until the oil turns red.

Pour in appropriate amount of boiling water and add fried tofu.

When the water boils again, add the marinated fish pieces and cook for 5-6 minutes (remember not to stir vigorously with the spatula, just push it gently along the edge of the pot with the spatula, otherwise the tofu and fish pieces will break).

Add a little salt and chicken essence to taste.
