Peel, wash and cut the lotus root into thicker shreds (the method of shredding lotus root is introduced in my previous recipe - Spicy and Sour Shredded Lotus Root)

Shred the meat, cut the dry red pepper into sections, slice the ginger, mince the garlic

Heat oil in a pan, add ginger slices and fat meat and fry them dry

Add minced garlic and shredded pork and stir-fry until color changes

Stir in dried red pepper segments to bring out the spiciness

Stir-fry the shredded lotus roots until cooked, add a little salt and chicken essence and stir-fry evenly

Sprinkle with green onions and stir-fry evenly

Take it out of the pan and put it on a plate. It’s spicy, crispy and tender, and goes very well with rice
