Pack up the fish, drain it and set aside

Non-stick pan, grease it with ginger to prevent the fish from breaking the skin

Heat the pan, add appropriate amount of oil, add fish and fry both sides till golden brown

When the temperature is high, add sugar, cook in vinegar, Huadiao wine (if you don’t have it, use cooking wine or white wine), onion and ginger

Add water, appropriate amount of dark soy sauce and salt, cover the pot and cook until cooked

Turn off the heat and add seafood sauce or steamed fish soy sauce, or chicken essence
