  1. Soak the black fungus in warm water 3 hours in advance, wash and slice.

  2. Slice ginger, cut green onions into sections, and slice mushrooms and carrots.

  3. Cut the tofu into cubes. After the oil is hot in the pan, add the tofu cubes and fry until golden brown on both sides. Dish out and set aside

  4. Leave oil in the pot, sauté the ginger slices and add mushrooms, carrots and black fungus.

  5. Stir-fry for two minutes, add water and simmer until cooked.
