Wash the king oyster mushrooms.

Clean and slice beef.

Place in a food processor and beat into mincemeat.

Put an appropriate amount of rapeseed oil in the pot, add spices such as sannai, star anise, white buckwheat, cinnamon, and green onions and ginger slices. Heat slowly over medium-low heat. After frying the aroma of the spices, the surface of the green onions will become charred. Remove the spices. Note: You can also mix peanut oil or corn oil. But be aware that peanut oil solidifies easily at low temperatures, so corn oil and rapeseed oil can be used when the temperature at home is low in winter.

Pour in the beef filling and stir-fry until it changes color and spits out oil, then add soybean paste (noodle sauce or sweet noodle sauce) and Pixian bean paste, stir-fry over medium heat until it spits out oil and the surface of the beef is slightly crispy. If you don’t like spicy food, you can omit the Pixian Douban in this step and replace it with an equal amount of soybean paste.

Pour the king oyster mushroom slices into the pot, stir-fry until the surface becomes soft, then pour in rock sugar.

If the rock sugar is relatively large, you can put it in the microwave for 30 seconds and then break it into small pieces.

Continue to stir-fry until the water vapor of the king oyster mushroom evaporates and the ingredients in the pot spit out oil and the fragrance overflows. Then add sesame oil, pepper oil or rattan pepper oil, stir-fry evenly, and add salt, chili oil, chicken essence and MSG according to your own taste. Then turn off the heat.
