Cut pork belly into small pieces.

Blanch it in a pot under cold water, remove and wash off any floating foam.

Wash the mushrooms and soak them in water.

Put the pork belly into the pot, add ginger, cinnamon, star anise, grass fruit, and peppercorns and stir-fry until fragrant. Add cooking wine, light soy sauce, dark soy sauce, and rock sugar and stir-fry until browned.
