Overview
I really like the unique aroma of cooked large intestine, but it’s a bit troublesome to clean. This time I chose the intestine which is more delicious. The structure of the intestine is somewhat similar to that of pork belly.

Take a clean large bowl and put it into the large intestine, add an appropriate amount of cornstarch, salt and vinegar and rub it with your hands, then rinse it with water and continue to rub it twice

After cleaning the outside, clean the inside. As shown in the picture, you can cut off some excess fat inside, but leave a part so that it will be fragrant when cooked. Then repeat the operation in step 2 and knead three times. After washing, continue to flip it to the outside

The large intestine that has been washed three times inside and outside is very clean and there is no peculiar smell

Put the washed intestines into the pot with cold water, add appropriate amount of ginger slices, Sichuan peppercorns and a spoonful of cooking wine and boil for two minutes

Rinse the drained intestines with clean water and set aside

Put the ingredients in step 7 into the pressure cooker, add 100ML brine juice, an appropriate amount of light soy sauce, dark soy sauce, salt, and sesame oil to prepare the brine. Add the intestines and add an appropriate amount of water to cover the pig intestines. When you hear steam coming out of the lid, turn down the heat and continue cooking for 15 minutes
