Pouring winter melon with juice
Overview
I really like dishes with gravy, it is delicious and goes well with rice. Winter melon itself is tasteless, stir-fried and not easy to color, so using the gravy method complements each other.

Cut the winter melon into cubes and the salty pork neck into cubes;

Turn on medium heat, simmer the pork until the oil and pork texture are crispy, scoop up the meat, drain off the excess oil, and leave an appropriate amount of oil at the bottom of the pot;

Turn on high heat, add ginger slices to the pot and sauté until fragrant;

Pour in the winter melon, add 1/4 teaspoon of salt, and fry until translucent;

Pour in the bacon bits and stir-fry for a while, leaving some space in the middle of the pot;

Add about 1/2 cup of water, 1 tablespoon of oyster sauce, 1 tablespoon of hoisin sauce, 1/2 tablespoon of tomato juice, 1 tablespoon of light soy sauce, 1/4 teaspoon of sugar, and 1/3 teaspoon of pepper. Stir evenly. Pour in about 1 tablespoon of starch water and add 1 teaspoon of sesame oil. Stir a few times. Remove the winter melon juice first, then pour in the remaining juice.
