Five-Spice Braised Pig Ears

Purchase high-quality pig ears, clean them and set aside for later use.

Use a kitchen spray gun to burn off the down on the cleaned pig ears, paying special attention to the hair in the ears! This step can not only remove the pig hair but also reduce its own fishy smell. If conditions permit, it doesn’t matter how black it is!

Soak the burnt pig ears in cold water and use a hard-bristled brush to clean away the black dirt on the surface.

Prepare the spices as described above!

Put the sugar in the pot and slowly stir-fry over low heat until the sugar turns brown.

Fry the sugar until it becomes dark brown and thick smoke comes out, add hot water and simmer.

Put all the spices and an appropriate amount of sugar into the pot, add an appropriate amount of water, bring to a boil over high heat, simmer for one hour, add salt, cook for another 30 minutes, turn off the heat and simmer for 30 minutes.

Take out the cooked pig ears and let them cool before eating. They are also very delicious when hot!
