Preparation: Hairtail, already processed.

Change the knife to cut into sections.

Add cooking wine, pepper, and salt and marinate for a while.

Prepare some minced garlic and ginger.

The marinated hairtail is dipped in a layer of fried rice flour.

Heat an appropriate amount of oil in a small soup pot until it is 50% hot, add the marinated hairtail and fry it.

Fry until golden brown and fragrant. If you want to stew after frying, fry it a little dry.

Take it out and drain the oil and set aside.

Heat a little oil in a pan, add minced ginger and garlic and saute until fragrant.

Return the fried hairtail to the pot.

Add: a spoonful of Laoganma, dark soy sauce, sugar, add an appropriate amount of boiling water and simmer over high heat for a while, about three minutes.
