Spicy Garlic Steamed Tomato Box
Overview
Eggplant is delicious but very oil-absorbent. Now that we are promoting health and deliciousness, try a steamed eggplant box. The garlic-scented eggplant box is particularly delicious.

Wash the eggplant and cut into pieces with razor blades.

Add a little salt and white vinegar to the water, stir evenly, and soak the eggplant for half an hour.

Put all the filling ingredients into a bowl and stir vigorously in one direction. Set aside.

Pour vegetable oil into the pot, add half of the minced garlic and saute over low heat until it turns yellow.

Squeeze out the water from the soaked eggplant. Add appropriate amount of filling to each slice.

Pour cold water into the pot, bring to a boil over high heat and then steam for about 10 minutes.
