  1. Wash the crayfish you bought with a toothbrush

  4. Pour oil into a hot pan (you can add more oil), then add onion, ginger, garlic, and peppercorns and stir-fry until fragrant.   5. Pour another bottle of beer to cover the shrimps, and add spices: star anise, bay leaves, cinnamon, fennel, Pixian bean paste, salt, sugar, allspice. Cover the pot and simmer until the soup is reduced (turn over after five minutes)
