Stir-fried noodles with green beans, mushrooms and shredded pork

My parents went to my aunt's house. If I don't want to bother cooking rice alone, let's eat some fried noodles. I have green beans, shiitake mushrooms, lean meat, etc. at home, which are just right, so let’s stir-fry green beans, shredded pork, shiitake mushrooms, etc. It’s so delicious.

Soak the dry rice noodles overnight, at least 4 hours, until soft.

Cut lean meat (more than 1 tael) into shreds, add 1 gram of salt, 1 tablespoon cooking wine, 1 tablespoon oil, knead evenly, and marinate for 10 minutes. This way the shredded meat becomes tender when fried.

Wash the green beans, mushrooms and peppers and cut into shreds.

Boil the water, add the soaked rice noodles, and cook until it can be easily cut off with chopsticks. (The green beans and shiitake mushrooms can be blanched together in water at this time. If it’s troublesome, don’t blanch them.)

Pick up the cooked rice noodles and rinse them with tap water. One is to wash away the rice paste, the other is to cool down, and then dry the water.

Put a small amount of oil in the pot, add the shredded pork and stir-fry until it changes color, then quickly scoop it up.

Add the green beans, mushrooms and peppers and stir-fry until they change color and are lifted. The green beans must be fried. (If you have blanched it in water before, just stir-fry it for a few times.)

Pour some more oil into the pot, pour in the dried rice noodles, stir-fry for a while, you can use chopsticks to assist.

Add the shredded pork, green beans, mushrooms and peppers that were fried earlier.

Add light soy sauce and salt to taste, taste for saltiness, stir-fry and mix well.
