Beef stew with potatoes
Overview
If I don’t like spicy food, I just put in one green pepper and two millet peppers and it was already so spicy that I was covered in sweat~~ But it’s quite enjoyable. I’ll try to increase the amount next time~~~

Cut carrots, potatoes, and green peppers into cubes and set aside

Slice ginger, peel off garlic, and cut millet and pepper into sections

Cut the beef against the stripes into the size you like

Put the beef in cold water, add ginger slices and 1 tablespoon of cooking wine, and bring to a boil

Then take it out, rinse it with warm water and dry it

Heat oil in a pan until 7 or 8 layers are cooked, then add beef and stir-fry

Stir-fry until the beef is slightly charred, add ginger, garlic and chili

Add light soy sauce, dark soy sauce, and cooking wine and stir-fry until colored

Add an appropriate amount of water (it is better to cover the beef) and bring to a boil

Transfer to a clay pot, add rock sugar, bring to a boil over high heat, and simmer over low heat for 1.5 hours

Add carrots and potatoes and continue to simmer for half an hour

Add the green pepper and turn up the heat to collect the juice, stirring while collecting
