The main materials are ready;

Durian should be picked when ripe, soft and sweet enough. Take an appropriate amount of durian meat and put it into a manual food processor;

Beat slightly until it becomes large particles;

Then form into a ball with a diameter of about 3 cm, place on a baking sheet lined with greaseproof paper, wrap with film, and freeze in the refrigerator for about 4 hours;

After freezing the durian, add half cornstarch, half tempura powder and water to make a paste. Don’t make it too thick, as the coating will be thicker. Don’t make it too thin, because the tempura powder still needs to be caught;

Fill the pan with oil and heat it up. Those with experience can heat the oil to 80% heat before frying. If you are not sure about the heat of the oil, you can put a needle thermometer on it. If the oil is heated to about 190 degrees, it will be enough;

Dip the durian balls into the batter. When the batter stops dripping, wrap a thin layer of cornstarch in it. Put it in boiling oil and fry for 1 to 1 and a half minutes. Remove and place on kitchen paper.

Eat it while it's hot, the durian heart inside is still cold. Definitely compared to fried ice cream, but the taste is more mellow and rich!
