Prepare materials.

Peel and clean the pork and cut into thick strips as long as the middle finger.

Soak 5 grams of green onion segments and 3 grams of ginger slices in water.

Add beer, Sichuan pepper powder, 15ml of light soy sauce, 3g of salt, pepper, green onion and ginger water to the cut meat and marinate for 20 minutes.

Add oil to the pot and when the oil is 60% warm, use chopsticks to lower the meat into the pot one by one.
