Bitter Melon Fish Soup
Overview
Anhui carp, also called grass carp, is rich in unsaturated fatty acids, which is beneficial to blood circulation. Anhui fish is rich in selenium, and regular consumption has anti-aging and beauty effects. Bitter melon clears heat, detoxifies, nourishes and rejuvenates skin. Lycium barbarum clears away heat, improves eyesight, and protects eyes. Prepare ingredients: 1 Anhui fish head, 1 fish tail, 1 bitter melon; PS: You can also use bighead fish for the fish heads

Wash the bitter melon, remove the flesh, cut into rings, and marinate with salt for 3 minutes; PS: Marinating with salt can remove the bitterness

Wash the fish heads and tails, marinate with salt, oil, soy sauce and cooking wine for 5 minutes;

Heat the pan, pour oil, add the marinated fish head and fish tail, add shredded ginger and fry over low heat until lightly browned. Flip once; PS: Cover the pot to make it easier to cook. Cutting can remove the fishy smell

Boil water, add washed wolfberries and soaked scallops, and simmer for 8 minutes;

Add bitter melon;

Add the fried fish head and tail and continue to cook for 5 minutes; PS: If you like to eat MSG and chicken essence, you can add it. I use scallops to enhance the freshness and do not eat MSG and chicken essence.
