Ants climbing the tree
Overview
Ants climbing the tree, also known as minced meat vermicelli, is one of the special traditional dishes in Sichuan and Chongqing and belongs to Sichuan cuisine. Because the minced meat sticks to the vermicelli, it looks like ants crawling on the branches, hence the name. It is usually made with vermicelli and minced meat as the main ingredients, supplemented by auxiliary ingredients such as carrots, ginger, green onions, and bean paste. The finished dish has a light taste, is smooth and delicious, and has a bright red color. It has a unique flavor and is a great dish to go with rice!
