Gayu, pickled vegetables and tofu
Overview
There are many names for Gayu, including Huang La Ding and Yellow Duck. It’s called Gayu in Tianjin. It’s very delicious and must be eaten fresh. Generally, the croakers are not very big. I went to the market a few days ago and saw that the croakers were really quite big. There must be seven or eight ounces each, so I bought three of them. It’s not cheap! The spines on the back of the garfish are very hard and difficult to remove. So I asked the merchant to clean up the slaughter.
