Steam the bacon until soft and slice it into slices, cut the white scallions into sections and cut the green scallions into cubes.

Wash the rice and put it into the electric pressure cooker. Put a handful of the ends of the bacon slices, which are incomplete slices, into the pot and cook them together with the rice. Press the cooking setting.

Then grab a few fatter slices from the bacon slices and put them into the pot, stir-fry over medium-high heat to release the oil.

Stir out the oil, turn it to one side, let the oil flow into the other side, add minced ginger and garlic, and sauté until fragrant.

Add the Brussels sprouts cut on all sides, add about 1/3 tsp of refined salt and 1/4 tsp of pepper, and cook until half cooked.

Add the green onions, stir-fry for a while and turn off the heat.

After the rice is cooked, open the lid, pour the vegetables and bacon slices into the pot, cover and cook for five minutes, until the meat is cooked through.

After the rice is done, sprinkle with chopped green onion, stir the rice evenly, and serve. If the rice is not salty enough, add an appropriate amount of light soy sauce and mix well with the rice.
