Yellow rice, walnut kernels and candied dates rice dumplings
Overview
This rice dumpling is also a sweet rice dumpling, but it does not use glutinous rice entirely, but adds some rhubarb rice. Rhubarb rice is also sticky, but for the elderly with poor gastric function, it is better than pure glutinous rice and not so difficult to digest. This rice dumpling is made for my mother-in-law, so I specially added yellow rice and walnut kernels to increase the taste and nutritional content, and also to occupy more space, so that less rice can be put in it, making it easier for the elderly to digest it. Originally we were going to add red dates, but my mother-in-law loves candied dates very much. The Dragon Boat Festival only happens once a year, so we followed her preference and let her eat candied jujube rice dumplings.

Soak the red cowpeas in water one night in advance and soak the walnut kernels in advance

Soak the glutinous rice and yellow rice in water about 3 hours in advance

Soak the walnut kernels in advance and try to remove the inner layer of skin, which will have a slightly bitter taste.

Put the two soaked rice and beans together

Roll up one end of the rice dumpling leaves into a cone shape

Then fold the long part back so that it can tightly wrap the rice inside

Put it into the pot, and the water will cover the rice dumplings by 2-3 cm

Bring to a boil over high heat, then simmer over low heat for 1 and a half hours
