Chop the duck meat, put it into the pot, add ginger, blanch it with cooking wine and remove the cold water.

Chop the ginger, onion and garlic.

Heat oil in a pot and sauté ginger, scallions, star anise, bay leaves, cinnamon, and Sichuan peppercorns until fragrant. Add duck meat and stir-fry evenly.

Add salt, soy sauce, oil and garlic and stir-fry evenly. Pour in a can of beer and bring to a boil over high heat for 2 minutes.

Transfer to a casserole and simmer over low heat for 30 minutes.
