Mapo Tofu
Overview
I've always had a soft spot for vegetarian tofu. Tonight, I will have a dish of mapo tofu.

Prepare ingredients: tofu, pork essence, Pixian bean paste, pepper, minced ginger, minced garlic, chopped green onion.

Slice the tofu and then cut it into 2cm square pieces.

Pork essence is minced with a small amount of fat.

Heat oil in a pan.

Saute peppercorns until fragrant.

Scoop out the browned peppercorns and discard.

Pour in the minced ginger and garlic and sauté until fragrant.

Add 1 tablespoon of Pixian bean paste and stir-fry until red oil appears.

Pour in the minced meat and stir-fry.

Add water to the pot and add light soy sauce to enhance the aroma (because the bean paste contains a lot of salt, there is no need to add salt).

Add dark soy sauce for color.

Bring the minced meat and sauce to a boil.

Pour in the tofu cubes and simmer for 2 minutes to absorb the flavour.

Add water starch to thicken.

Turn off the heat and put it into a soup basin.

Sprinkle in the chopped green onion and serve.
