  1. Wash the eggplant and cut it in half.

  2. Place in the oven and steam for 10 minutes.

  3. After the eggplant is steamed, score it with chopsticks a few times.

  4. Dice onions and green and red peppers! Finely mince onion, ginger and garlic.

  5. Heat oil in a pot, add minced ginger and garlic and saute until fragrant.

  6. Add the minced meat and stir-fry until it changes color. Add cooking wine, light soy sauce, and oyster sauce and stir-fry evenly.

  7. Add onions and diced green and red peppers and stir-fry until cooked through.

  8. Add a little salt, sugar and chicken essence to taste, pour in water starch and stir well.

  9. Pour the fried minced meat into a plate, sprinkle with chopped green onion and serve.
