Overview
If you don’t look carefully at the structure of this spinach jelly, it’s easy for people to think it’s a cake. Since the jelly is added with spinach juice, there will be some fibrous filaments from spinach on top. When unmoulded, it won’t be as smooth and delicate as pure jelly, but the presentation is still very interesting

Treat and wash the meat skin

Bring to a boil in cold water and cook for about five minutes

Take it out and scrape off the greasy and white meat on the surface

Cut into strips and rinse with water

Put it into a rice cooker or electric pressure cooker, add an appropriate amount of water, salt, and chicken essence until the water covers the pork rinds. You can set any button. After cooking, take out the pork rinds and set aside. Do not throw away the soup used to boil the pork rinds. It will be useful in the end

First blanch the spinach in boiling water, then take it out and put it into a food processor to make juice. Do not add additional water to the juice

Add spinach juice and pork rinds to a food processor and add a ladle of pork rind soup to a paste

Pour into the silicone mold until it is full and leave it for a few hours to solidify

After solidification, turn it around and press it gently before demoulding. It will be easy to demould

After unmoulding, turn it upside down on a plate

Pour the pork rind soup in the center. After it solidifies, make a small goldfish with preserved eggs and place it inside. Then pour a layer of pig rind soup on top of the whole model to make it shiny. Note that there is no preserved egg in the middle. You can cut two petals from a small tomato to make the shape. Cut the petals from a small tomato to make a lotus flower

You can use kiwi fruit or blanched vegetable leaves to cut out the lotus leaves into shapes and place them on the table
