Wash the ingredients and set aside.

Cut the eggplant into thick strips.

Cut the ingredients as shown in the picture.

Add yellow sauce + sweet noodle sauce, cooking wine + water to thin.

Add the minced meat. Add ginger and mix well. Marinate for 10 minutes to infuse the flavor.

Heat the pan with cold oil, add the eggplant and stir-fry over medium-low heat.

Then stir-fry over high heat to drain out the remaining oil.

Add the marinated minced meat to the remaining oil and stir-fry.

Add onion and ginger.

Then add the eggplant, add some sugar, and add an appropriate amount of salt and light soy sauce.

Add green and red peppers and stir-fry evenly.

Take it out of the pan and put it on a plate and sprinkle with garlic.
