Braised Oxtail with Tomato
Overview
Sweet and sour are always babies’ favorite. Roast the meat with tomatoes and tomato sauce, and pour the meat and soup on the white rice. It is hot, mellow and delicious. My little ones always eat it without getting tired of it. In particular, the oxtail, which is rich in nutrients and tastes great, is grilled with tomatoes and tomato sauce. The oxtail is so rotten, the soup is sticky, and the color is red. It is delicious and festive!

Wash the oxtail and soak it in water for 3 or 4 hours in advance, changing the water several times in the middle; (generally merchants will sell the oxtail in slices. If it is a whole oxtail, you can also ask the merchant to chop it into large pieces)

Pour the oxtail into a pot with cold water, bring to a boil over high heat and beat off the foam until all the blood foam comes out. Remove the oxtail and rinse it with clean water;

Put the oxtail into the pressure cooker, add an appropriate amount of water to cover the oxtail; add ginger slices and all the spices at the same time (the spices can be wrapped in gauze, and there is no need to filter after cooking); turn to low heat after high heat, and press for 20 to 30 minutes;

After natural exhaust, pour out the soup and oxtail, take out the spice bag, let it sit for a while, and then skim off the oil;

Peel the tomatoes and cut into cubes; chop the green onions into small pieces, leaving some green green onion leaves aside;

Start the wok, add an appropriate amount of cooking oil, heat the pan with cold oil and sauté the chopped green onion;

Add diced tomatoes and stir-fry over high heat until soup comes out;

Continue to stir-fry over high heat until the soup becomes red;

Add oxtail and oxtail soup at the same time; (if there is too much soup, you don’t have to add all of it)

Bring to a boil over high heat, then reduce to low heat and simmer slowly until the soup becomes thick, add appropriate amount of salt to taste;

After putting it on the plate, sprinkle a few chopped green onions for seasoning and color.
