Lard rice with rice pudding
Overview
Chinese New Year is coming soon, so prepare rice pudding in advance and reheat it to enjoy. Babao rice is the most traditional New Year’s Eve dessert for us Shanghainese. It consists of soft glutinous rice, sweet bean paste, and various preserved fruits, which symbolizes sweetness and happy reunion.

Cut all kinds of preserved fruits into strips, cut red dates into rounds, prepare cooked pine nuts, green raisins and dried cranberries

Wash the glutinous rice and drain the water

Pour the amount of water into the rice cooker to half of the first section of your index finger and press the cooking button

When the time is up, take it out. The cooked glutinous rice should be soft and glutinous but not mushy

While hot, add lard and mix quickly

Then add sugar and mix well

Mention and prepare red bean paste (sweet)

Take a bowl and put some lard on it

Add various preserved fruits to the bottom of the bowl

First add the glutinous rice to the bottom of the bowl, then slowly push the glutinous rice towards the sides of the bowl until it is hollowed out

Add bean paste into the center and press lightly

Then add glutinous rice to cover the bean paste and press it tightly

Steam in a pot with cold water over high heat for 20 minutes

Immediately invert in a bowl and enjoy
