Cut the whole pineapple into 1/3, and carefully scoop out the pineapple flesh

Cut into thick slices and soak in light salt water for a while

Remove seeds from red pepper and cut into cubes

Remove seeds from green pepper and cut into cubes

Cut the tenderloin into about 2CM thick slices, pat it loose with the blade of the knife, then chop lightly with the back of the knife to make the meat soft

Cut into equal pieces

Add ginger, cooking wine, egg white, dry starch, white pepper, a little salt, mix well and marinate for a while

Mix flour and a little dry starch, take a piece of meat and coat it evenly with flour, shake off the remaining flour

Heat the oil slightly, add the meat pieces and fry until lightly browned and take it out

Turn to medium heat, heat the oil until it is about 70% hot, add the meat pieces and fry again until golden brown, remove and drain

Tomato sauce, light soy sauce, vinegar, sugar, appropriate amount of salt, a small amount of water and mix thoroughly
