Soak the tofu skin in water until soft.

Take a large bowl, add 2 tablespoons of soy sauce, 1 tablespoon of sugar, chicken essence, and cooking wine, add an appropriate amount of water, and stir evenly.

Marinate the tofu skin in the sauce for about 15 minutes.

Take a complete piece of bean skin and lay it on a cutting board.

Spread the remaining tofu skins on top, sprinkle the marinated tofu skins on one side, and place the damaged tofu skins in the middle.

Wrap into long strips.

Place the wrapped bean curds on a plate, top with scallions and ginger slices, and steam over medium heat for about 15 minutes.

After it has cooled down and is not hot to the touch, pat both sides with starch.

Heat the oil until small steam bubbles begin to appear, add the tofu skin and fry until golden brown, take it out.

Remove and place on a cutting board to cool.

Cut into strips.

Mix 1 tablespoon of soy sauce, 1 tablespoon of sugar, and sesame oil in a bowl and pour it over the roasted goose. You can also just drizzle the sesame oil without the soy sauce and sugar.
