Winter Melon and Seafood Boiled [Yunyun Little Chef]

A refreshing winter melon seafood stew with a cool and sweet taste is more suitable for the weather that is getting hotter. Winter melon has a bland taste, and when paired with seafood, the umami flavor can be better reflected and highlighted.

Peel the winter melon and cut it into trapezoidal pieces, score the winter melon with a knife, sprinkle salt with the skin side up, marinate for about an hour, drain out the water, wash and set aside.

Prepare the seafood, slice the king oyster mushrooms and set aside.

Add bonito stock, mirin, sake, chicken essence, and light soy sauce to the pot and bring to a boil over high heat. Add the washed winter melon to the cooked soup stock, cook over low heat until soft, take out and cool in ice water.

Save the juice from cooking the winter melon and cook the seafood and king oyster mushrooms for 2 minutes. Dish them out and cool them in ice water.
