Soak dried peanuts for half a day or overnight

Soak the peanuts, add salt, star anise, ginger and green onion and cook until cooked, drain and control the water and set aside

The yuba or vegetarian meat I use is soaked in oil and cut into sections

Wash celery, carrots and cauliflower

Soak black fungus until soft, wash and prepare water

Lotus root slices (easy to oxidize, drain immediately)

Cut snow peas into diamond-shaped pieces

Add scallion oil and sesame oil to the pot and stir-fry peppercorns

Add carrots and stir-fry (fat-soluble vitamins are better absorbed by stir-frying with oil)

Pour the fried carrots into the mixing bowl

The dish is ready to be mixed

The salt is exquisite and fresh. You can taste it and adjust it to your own taste. (I used scallion oil and sesame oil when frying carrots before, so I don’t need to add them anymore.)
