  1. Wash and peel the lotus root, cut into thin slices, soak in water and remove the starch.

  2. Boil water in a pot, add a small amount of salt, and after the water boils, blanch the lotus root slices.

  3. Prepare minced garlic and coriander.

  4. Blanch in cold water.

  5. Add minced garlic, coriander, salt, chicken essence, thirteen spices, sugar, soy sauce, vinegar, oil, chili oil, and pepper oil to the lotus root slices. Could use more vinegar.

  6. Heat oil in a pot, turn off the heat when it starts to smoke, and pour the seasoning on top.

  7. Spicy lotus root slices are finished.
