Guading Ma Shi Soup
Overview
When I was making this soup, someone was saying: What kind of soup are you making? I said; melon and sesame soup! He said, "Don't you stop eating melons at the beginning of autumn?" I glared at him, and he said again, "Oh!" I don’t want to eat watermelon...! It is a common pasta in the Guanzhong area of Shaanxi Province. It is cut into strips or dices with water dough, rolled into small rolls with your thumbs on a chopping board or patterned wall, cooked in boiling water, and eaten with vegetables of various flavors. There are two types of dried sesame seeds and soup. One is to cook the sesame seeds, drain them and pour the juice over them and mix well. It is called soy sauce dry sesame seeds. If it is stewed with fried vegetables, it is called braised sesame seeds. The one I made is called soup sesame seeds. The weather is getting colder, so eating a hot bowl of beef, melon and sesame soup is also a good choice!

Prepare the ingredients; set aside beef, cucumber, loofah and zucchini;

Add water and a little salt to the flour and stir with chopsticks until it becomes fluffy;

Knead the dough with your hands, cover it with plastic wrap and let it rest for about half an hour;

Cut the beef into small dices, I don’t use a lot of meat, you can use as much as you like;

Put it into a bowl, add a little salt, white pepper and cooking wine and marinate for ten minutes;

Peel the loofah and cut into small dices, cut all cucumbers and zucchini into small dices, and chop green onion and ginger;

Heat the wok until the oil is hot, add the beef and stir-fry until fragrant;

Heat up a wok and pour oil. Don’t use a lot of oil. The oil in the diced beef will be enough for a while. Add the peppercorns and stir-fry until fragrant. Take out and throw it away;

Add chopped green onion and ginger and saute until fragrant;

Add diced loofah and stir-fry for a while;

Add in diced cucumber and zucchini and stir-fry for a while. Pour in an appropriate amount of light soy sauce and stir-fry for a while. Pour in half a small bowl of water and bring to a boil;

Add the fried beef and stir-fry evenly, turn off the heat, add a little salt, mix well, and set aside;

Roll the loosened dough into a rectangular shape;

Use a knife to cut into long strips or directly into small dices;

Find a wheat straw facing the wall, take the noodles in your left hand and twist off a small piece with your right hand;

Use your thumb to rub it on the wall to form a pattern;

If you don’t have a straw surface, rub it directly on the chopping board;

Complete each piece in turn like this and dry on the wall for later use;

Pour an appropriate amount of water into the pot and bring to a boil. The amount of water depends on the thickness you need. Pour in the kneaded sesame seeds and cook;

Pour in the fried beef melon 𠧧, add a little light soy sauce, salt and pepper, finally drizzle with sesame oil, sprinkle with chopped green onion and it's ready to eat.
