Braised beans and eggplant with soy sauce
Overview
There is nothing more delicious and nutritious than seasonal dishes. Beans and eggplant are both delicious summer dishes. Braised beans and eggplant are my mother-in-law's favorite dishes. I like to braise them in sauce and add some garlic slices. It is a vegetable that goes well with rice. I added some shredded pork to make it more delicious.

Wash the eggplant and cut into cubes.

Cut beans into small pieces.

Shred the pork.

Cut red and green peppers into small pieces, slice garlic, and mince some garlic.

Sauté garlic slices in warm oil.

Add shredded pork and stir-fry with a little cooking wine.

Fry the shredded pork until it changes color, add beans and eggplant.

Fry beans and eggplant until soft and add appropriate amount of sweet noodle sauce.

After stir-frying, add appropriate amount of boiling water. It is better to just soak the vegetables.

According to personal taste, simmer the beans and eggplant until cooked, add diced red and green peppers and minced garlic.

Add a little salt to reduce the juice, stir well and serve.
