Overview
Shredded radish cake is a traditional snack in Shanghai. It has a crispy outside and a fresh and salty filling. Especially on this basis, shredded ham is added, making it a famous snack in Jiangsu and Zhejiang. Its traditional production process is to slowly heat and fry it with warm oil. Because I had eaten it at the Chenghuang Temple snack bar in Shanghai, I started to learn how to make it. I have made it many times to this day, but it has never been made by frying it, but by baking it. Deep frying is not healthy, and it wastes oil. It is difficult to dispose of the oil after frying, so it has not been made according to the original recipe. Compared with fried ones: the taste is not as crispy, and there is not much difference in other aspects. And healthier. It’s already the beginning of winter. As the old saying goes: Eat carrots in winter and ginger in summer, and you won’t have to worry about the doctor prescribing medicine. You can eat radish in this way, not only to absorb nutrients, but also to have snacks to satisfy your cravings.

Wash the red and white radish, cut into shreds, blanch and dry;

Add shredded ham and all seasonings and mix well;

Knead ingredients AB separately into a smooth dough and rest for 15 minutes;

"Fold the rolled dough into a quilt", cover it with a wet drawer and let it rest for 15 minutes; repeat rolling it out, folding the quilt and letting it rest again;

After relaxing twice, roll the dough into a sheet again, roll it up from one side, and cut into pieces of the same size;

Take out a pot and cut it horizontally in the middle, with the layered side facing up;

Use a rolling pin to roll it into a dough, turn it over (the side with more layers is on the bottom) and brush the surrounding sides with egg white (to prevent cracking);

Wrap in the filling and seal; do the same with all dough pieces in turn. Finally, place the prepared biscuits on a baking sheet and bake in a preheated oven at 160 degrees for 15-20 minutes.
