Stir-fried spinach with bean sprouts
Overview
I grew spinach on my balcony. Maybe it’s not the season for growing spinach now. It’s so thin that it’s not enough to eat in one meal, so I bought some soybean sprouts to go with it. Spinach is rich in vitamin C and folic acid, which can enhance the body’s absorption of iron. It is an ideal food for iron deficiency anemia. The dietary fiber in spinach can have a good laxative effect. Regularly eating soybean sprouts can effectively prevent and treat vitamin B2 deficiency.

Wash the soybean sprouts, drain them and set aside.

Wash the spinach and quickly blanch it in boiling water to remove some of the oxalic acid.
