Braised Duck with Mushrooms
Overview
Duck is a very game ingredient, and it has a different flavor when paired with different foods. I just received some mushrooms from a friend today and I will make a braised duck with mushrooms.

Prepare the ingredients and set aside. Soak the mushrooms in advance and wash them

Wash the duck and cool it with water. Heat the pot without adding any oil. Pour the washed duck into the pot and fry for a while. Pour it out, wash it with cold water and dry it. This approach is mainly to drain blood and reduce oil. If you don't want to stir-fry in a dry pan, you can replace it with boiling water.

Heat oil in a pan, add ginger, star anise and cinnamon until fragrant, add duck meat and stir-fry evenly.

While frying, add wine, fermented bean curd, oyster sauce, soy sauce, vinegar, sugar, and salt and stir-fry until evenly browned.

Mix all the seasonings well, then drain the pasta water, bring to a boil, add the mushrooms and simmer over low heat for about half an hour.

After simmering for half an hour, check how much soup is left in the pot. If you are not sure about the taste of the soup you put in, test the taste first and adjust it. If there is too much soup, you can simmer it for a while or reduce the heat to reduce the juice and add the green onions before serving.
