Curry Beef Rice
Overview
Curry originates from India and is a sauce made from a variety of spices, so it has a very rich taste and golden color. It is said that curry can not only protect the heart, but also prevent and fight cancer. I have posted a recipe for braised beef before, and today I will share a recipe for curry beef rice. In fact, as long as you prepare the braised beef in advance, this curry rice will be much simpler.

Steps

Wash the beef and cut into small pieces;

Add cold water to the pot, add ginger slices and Huadiao wine, and cook for 5 minutes after the water boils;

Remove and drain the water;

Pour an appropriate amount of vegetable oil into the wok, add ginger slices, star anise, cinnamon, strawberry and nutmeg and stir-fry until fragrant, then add beef cubes and stir-fry for a few minutes;

Pour in light soy sauce, dark soy sauce, Huadiao wine, oyster sauce and a little granulated sugar, stir-fry until browned;

Pour boiling water to cover the meat, add bay leaves and a seasoning box containing Sichuan peppercorns and cumin;

Simmer over low heat for two to three hours until the soup thickens and turn off the heat;

Serve out and set aside;

While the beef is stewing, wash the potatoes, carrots and onions and cut them into small pieces to prepare the curry;

Heat a wok over a small pot, pour an appropriate amount of vegetable oil, add the carrot cubes and stir-fry for a while;

Pour in the potato cubes and stir-fry for a while;

Pour in the onion pieces and stir-fry for a while;

Pour in the stewed beef, pour boiling water to cover the vegetable noodles, and cook over medium-low heat until the vegetables are sparse and tender;

Add appropriate amount of curry cubes;

Turn to medium high heat and simmer until the soup thickens and turn off the heat;

Serve beef curry with soup on top of rice and it's ready to eat.
