Eggplant with minced meat

Speaking of fish coriander, people often say that it does not have fish. I have seen one fish-flavored recipe after another in gourmet food, but it seems that fish does not appear. In fact, this is completely wrong. You can't get the fish flavor just by using Pixian bean paste and vinegar, but you have to use something called fish pickled pepper. The method of making fish pickled peppers is slightly different from that of pickled peppers. When putting the pickled peppers into the pickled vegetable jar, they must be placed in layers, one layer of pickled peppers, one layer of small fish, and so on. Once the pickling time is up, the pickled fish peppers will be completed. When frying the shredded pork, add some fish pickled pepper, so you have fish-flavored shredded pork. Today I am making minced pork eggplant, and the method is the same as the ordinary fish-flavored eggplant. But as someone who is very attentive to cooking, I don’t want to call it fish-flavored eggplant. Because it is a serious minced meat eggplant, not a casual fish-flavored eggplant.

Wash several eggplants and set aside;
