Cut the ribs and marinate them with salt, chicken essence, light soy sauce and a little dry starch for 15 minutes

Heat the oil in the pan, fry the ribs, take them out for about 2 minutes and set aside

Pour a little oil into the pot, add the shredded ginger and minced garlic and stir-fry until fragrant

Add the ribs again, add a little cooking wine and stir-fry evenly

Put bean paste into the pot

Add water, then add a little dark soy sauce, oyster sauce, vinegar, stir well, bring to a boil over high heat, then cover the pot and simmer the ribs over low heat

Add shredded red and yellow peppers, cover the pot and simmer over low heat until the shredded peppers are cooked (if you like spicy food, you can use green and red peppers instead)

Add a little salt, chicken powder, and thicken with water starch

Sprinkle in chopped green onion and reduce the juice over high heat
