Corn and pork pie

Make the filling: Pour the minced meat, corn kernels, and green onions into a basin, add a little salt, chicken powder, soy sauce, cumin powder, sesame oil, sugar, and starch and stir evenly.

Add a little stock or water (about 2 tablespoons) and stir in one direction with chopsticks for about 3 minutes to make a tender and smooth filling.

Use a larger basin to scoop up the flour, crack in the eggs, use a bowl to fill with some warm water, and add some salt to mix.

Add the warm salt water to the flour in batches, stirring with chopsticks while adding, until the flour is moist and can form a ball.

Knead into a smooth dough. (As the saying goes, the three lights: the clean state of hand light, face light, and basin light)

Put the kneaded dough into the basin again, cover it with plastic wrap or a clean wet cloth, and let it rise at room temperature for more than 30 minutes in winter.

Make the pie crust: Take out the dough and knead it into a long strip, then cut it into 4 pieces of the same size. (4 sheets of dough make 2 cakes)

Use a rolling pin to roll out the dough thinly.

Roll out all the dough.

Spread the dough flat and add fillings.

Use a spoon to spread the filling.

After smoothing out the filling, leave a little edge on the dough.

Put another piece of dough on top, pull the edges evenly, and pinch to seal. (The dough is very elastic and will not break if you pull it. You can also dip some water into it to bond it. Pinch the lace while sealing)

Heat the pan and add appropriate amount of cooking oil. (The amount of oil used for cooking is about the same as usual)

Add the patties and fry over low heat until golden brown.

Turn over and fry the other side as well.

Spray a little water (about 1 tablespoon), cover the pot and bake for 1 minute.

After frying, take out the whole cake and cut into pieces and eat immediately.
