Clean and cut the fish into sections, add onion, ginger, garlic, pepper powder, salt, cooking wine, and white wine and marinate for 30 minutes.

Break the eggs into a bowl, add flour, mix well, and coat the fish segments in the batter.

Put some oil in the pan and fry the fish on both sides.

Add onion, ginger and garlic.

Add cooking wine, light soy sauce, dark soy sauce, vinegar, sugar and boiling water to cover the fish, bring to a boil, turn down to low heat, and simmer for 10 minutes.
