Seafood and vegetable stew
Overview
The little guy likes this dish the most, and even though he doesn’t usually like vegetables, he can still eat a lot of it. It seems that there was too much seafood today, it was completely covered, and the vegetables can’t even be seen, haha. Prepare all kinds of green vegetables, wash and drain them and set aside (the variety and quantity of vegetables are optional, I used baby cabbage, cabbage sum, and broccoli here).

Fresh seafood is cleaned and set aside. (Anyway, I used cooking wine and boiled water to boil it. Boil it or not, it’s up to you.)

Soak the dried seafood in water for fifteen minutes, pick it up, rinse it, drain and set aside. (I crushed the scallops slightly to make the flavor better)

Soak the dried mushrooms until soft, wash and cut into shreds and set aside.

Soak the vermicelli until soft, rinse and drain, cut two slits in the middle and set aside.

Cut the ginger slices and peel the garlic cloves and prepare to cook.

Put half of the ginger slices in boiling water, add some chicken powder, salt, and oil to the boiling water, then sear the vegetables (it doesn’t need to be overcooked, just cut them raw), remove them and put them on a plate.

In addition, use a non-stick pan to heat oil, first add garlic and sauté until fragrant, then add dried seafood, and finally add shredded mushrooms and fry over low heat until fragrant.

In addition, use a small milk pot, pour the soup (I used a certain brand of fresh chicken soup), and put the remaining half of the ginger slices into the soup and bring to a boil. After the water boils, put the fresh seafood and vermicelli in the soup and bring to a boil. After the water boils, add the fried dried seafood and mushrooms with oil into the seafood soup, add a small amount of salt to taste, toss twice and pour it on top of the mixed vegetables. Serve.
